Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • 5 tbsp melted butter

Cheesecake Filling:

  • 16 oz (2 blocks) cream cheese, softened
  • ½ cup granulated sugar
  • 2 eggs
  • ½ cup sour cream
  • 1 tsp vanilla extract

Apple Filling:

  • 2 apples, peeled, cored, and diced
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ½ tsp lemon juice

Crisp Topping:

  • ½ cup rolled oats
  • ¼ cup all-purpose flour
  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup melted butter

Instructions

1️⃣ Preheat oven to 325°F (165°C) and grease a 9-inch springform pan.
2️⃣ Mix graham cracker crumbs, brown sugar, cinnamon, and melted butter, then press into the bottom of the pan. Bake for 10 minutes, then let cool.
3️⃣ Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream and vanilla. Pour over the crust.
4️⃣ Toss apples with brown sugar, cinnamon, and lemon juice, then spread evenly over the cheesecake layer.
5️⃣ In a separate bowl, mix oats, flour, brown sugar, cinnamon, and melted butter until crumbly. Sprinkle over the apples.
6️⃣ Bake for 45-55 minutes until the center is set. Let cool completely, then refrigerate for at least 4 hours before serving.
