  • 4 boneless, skinless chicken breasts or thighs

  • 1 cup buttermilk

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1/2 tsp salt

  • 2 cups cornflakes, crushed

  • 1/2 cup breadcrumbs

  • 2 tbsp olive oil (or spray)

For the hot honey glaze:

  • 1/4 cup honey

  • 1 tbsp hot sauce (adjust to taste)

  • 1/2 tsp chili flakes (optional)


Instructions

  • Marinate chicken in buttermilk, garlic powder, paprika, and salt for at least 30 minutes (or overnight).

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment and grease lightly.

  • Mix coating: Combine crushed cornflakes, breadcrumbs, and olive oil in a shallow dish.

  • Coat chicken: Remove from marinade, dredge in the crunchy mix, and press to stick.

  • Bake for 25–30 minutes until golden and cooked through, flipping once halfway.

  • Make glaze: In a saucepan, heat honey, hot sauce, and chili flakes until warm.

  • Drizzle glaze over baked chicken and serve immediately!
