Description

This Baked German Pancake, also known as a Dutch Baby, is a light and fluffy oven-baked pancake with crispy edges and a custardy center. It puffs up beautifully in the oven and pairs perfectly with fresh fruit, syrup, or powdered sugar!

  • 3 large eggs
  • ¾ cup milk
  • ¾ cup all-purpose flour
  • 1 tbsp sugar
  • ½ tsp vanilla extract
  • ¼ tsp salt
  • 2 tbsp butter (for the pan)
  • Powdered sugar & fresh fruit (for serving)

Instructions

  • Preheat Oven: Set to 425°F (220°C) and place a cast-iron skillet or baking dish inside to heat.
  • Make Batter: In a blender, mix eggs, milk, flour, sugar, vanilla, and salt until smooth. Let sit for 5 minutes.
  • Melt Butter: Carefully remove the hot skillet from the oven, add butter, and swirl to coat.
  • Bake: Pour batter into the skillet and bake for 18-20 minutes until puffed and golden brown.
  • Serve: Sprinkle with powdered sugar, add fruit or syrup, and enjoy warm!
