Description
This Baked German Pancake, also known as a Dutch Baby, is a light and fluffy oven-baked pancake with crispy edges and a custardy center. It puffs up beautifully in the oven and pairs perfectly with fresh fruit, syrup, or powdered sugar!

- 3 large eggs
- ¾ cup milk
- ¾ cup all-purpose flour
- 1 tbsp sugar
- ½ tsp vanilla extract
- ¼ tsp salt
- 2 tbsp butter (for the pan)
- Powdered sugar & fresh fruit (for serving)
Instructions
- Preheat Oven: Set to 425°F (220°C) and place a cast-iron skillet or baking dish inside to heat.
- Make Batter: In a blender, mix eggs, milk, flour, sugar, vanilla, and salt until smooth. Let sit for 5 minutes.
- Melt Butter: Carefully remove the hot skillet from the oven, add butter, and swirl to coat.
- Bake: Pour batter into the skillet and bake for 18-20 minutes until puffed and golden brown.
- Serve: Sprinkle with powdered sugar, add fruit or syrup, and enjoy warm!
Notes
- Use whole milk for a richer texture.
- Add cinnamon or nutmeg for extra flavor.
- Serve with honey, jam, or whipped cream for variety.
