Ingredients
For the Crust:
- 2 cups Nilla wafer crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup mashed ripe bananas (about 2 bananas)
- 1 tsp vanilla extract
- ½ cup sour cream
- ¼ cup heavy cream
- 1 tbsp cornstarch

- 1 ½ cups whipped cream
- 1 banana, sliced (for garnish)

Instructions
1️⃣ Prepare the Crust – Preheat oven to 325°F (163°C). Mix Nilla wafer crumbs, sugar, and melted butter. Press into a greased 9-inch springform pan. Bake for 10 minutes, then let cool.
2️⃣ Make the Cheesecake Filling – In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in mashed bananas, vanilla, sour cream, heavy cream, and cornstarch until combined.
3️⃣ Bake the Cheesecake – Pour filling over the crust. Bake for 55-60 minutes, or until the center is just set. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour. Then, refrigerate for at least 4 hours (or overnight).
4️⃣ Add the Topping – Spread whipped cream over the cheesecake. Garnish with banana slices and crushed Nilla wafers.
