Ingredients
- 2 ½ cups all-purpose flour
- 1 packet active dry yeast (2 ¼ tsp)
- 1 cup warm water
- 2 tbsp olive oil (plus more for drizzling)
- 1 tsp sugar
- 1 tsp salt
- 2 tbsp fresh rosemary, chopped
- 4 garlic cloves, minced
- ½ tsp sea salt (for topping)
- Optional: 1 tsp dried oregano or thyme for extra flavor
Instructions
1️⃣ Activate the Yeast: In a bowl, combine warm water, sugar, and yeast. Stir and let it sit for 5-10 minutes until frothy.
2️⃣ Make the Dough: In a large bowl, combine flour and salt. Add the yeast mixture and olive oil. Stir to form a dough, then knead for about 5-7 minutes until smooth and elastic.
3️⃣ First Rise: Place the dough in a greased bowl, cover with a damp towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.
4️⃣ Prepare the Baking Sheet: Preheat oven to 375°F (190°C). Drizzle olive oil on a baking sheet and gently press the dough into a rectangular shape, stretching it with your fingers.
5️⃣ Add Toppings: Sprinkle minced garlic and chopped rosemary evenly over the dough. Drizzle with more olive oil and press down gently to create little dimples in the dough.
6️⃣ Second Rise: Let the dough rise for another 15-20 minutes on the baking sheet.
7️⃣ Bake: Sprinkle the dough with sea salt and bake for 20-25 minutes, or until golden brown and crisp on the edges.
8️⃣ Serve: Allow the focaccia to cool slightly before cutting into squares and serving.
Notes
✔️ For an extra kick, you can add a few red pepper flakes before baking.
✔️ If you don’t have fresh rosemary, dried rosemary works well too.
✔️ Serve with balsamic vinegar and olive oil for dipping.
