Ingredients
Scale
- 1 lb shrimp (peeled and deveined)
- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp cayenne pepper (adjust to taste)
- Salt and freshly cracked black pepper to taste
- 1 large cucumber, sliced into ¼-inch rounds
- 1 avocado, mashed
- 1 tsp lime juice
- 1 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Prepare the Shrimp:
- In a bowl, toss the shrimp with olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until evenly coated.
- Cook the Shrimp:
- Heat a skillet over medium-high heat. Cook the shrimp for 2–3 minutes per side, or until they are pink, opaque, and slightly charred. Set aside to cool slightly.
- Prepare the Avocado Mash:
- In a small bowl, mash the avocado with lime juice. Add a pinch of salt to taste.
- Assemble the Bites:
- Place a dollop of avocado mash on each cucumber slice. Top with a blackened shrimp and a sprinkle of chopped cilantro.
- Serve:
- Arrange on a platter and serve immediately for the best flavor and texture.
Notes
- Add a dash of hot sauce to the avocado mash for extra spice.
- For a tangy twist, drizzle with a touch of balsamic glaze or squeeze fresh lime juice over the bites before serving.
- These can be prepped in advance, but assemble just before serving to keep the cucumber crisp.
