Start your morning with a sweet and satisfying twist on a classic quesadilla! The Blueberry Breakfast Quesadilla combines warm, crispy tortillas with sweet blueberries, melted cheese, and a drizzle of honey for a deliciously sweet treat. Perfect for a quick breakfast or brunch, this dish is easy to make and packed with flavor.

Ingredients

Scale
  • 2 large flour tortillas
  • ½ cup fresh or frozen blueberries
  • ¼ cup cream cheese or ricotta cheese
  • ¼ cup shredded mozzarella or white chocolate chips (optional for extra sweetness)
  • 1 tablespoon honey
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon butter (for cooking)
  • Powdered sugar (for dusting, optional)

Instructions

  • Heat a large skillet over medium heat and melt the butter.
  • Spread the cream cheese or ricotta evenly on one of the tortillas.
  • Sprinkle the blueberries over the cheese, and add shredded mozzarella or chocolate chips if using.
  • Drizzle with a bit of honey and sprinkle cinnamon on top, if desired.
  • Place the second tortilla on top and press gently to seal the edges.
  • Place the quesadilla in the skillet and cook for 2-3 minutes per side, or until golden brown and crispy, and the cheese has melted.
  • Remove from the skillet and let it cool for a minute.
  • Slice the quesadilla into wedges and drizzle with extra honey or sprinkle with powdered sugar before serving.

Notes

  • For added flavor, you can sprinkle a bit of lemon zest or add a dash of vanilla extract to the cream cheese mixture.
  • You can use whole wheat tortillas for a healthier option.
  • If you prefer, add a handful of chopped nuts (like walnuts or almonds) for a little crunch.
