Ingredients
- 8 egg roll wrappers

- 1 tbsp cornstarch + 1 tbsp water (for thickening)
- 1 egg (for sealing the wrappers)
- Vegetable oil (for frying)

Instructions
1️⃣ Prepare the Blueberry Filling: In a small saucepan over medium heat, combine blueberries, sugar, and lemon zest. Cook for 3-4 minutes until the berries soften and release their juices. Stir in the cornstarch slurry (cornstarch + water) and cook for 1-2 minutes until thickened. Remove from heat and let cool.
2️⃣ Mix the Cream Cheese Filling: In a bowl, mix softened cream cheese with vanilla extract until smooth.
3️⃣ Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface. Spread a spoonful of cream cheese mixture in the center, then top with a spoonful of blueberry filling. Fold in the sides, roll tightly, and seal the edges with a beaten egg.
