- 4 medium russet potatoes, diced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ½ tsp dried oregano (optional)
- ¼ tsp red pepper flakes (optional, for a spicy kick)
- 1 tbsp butter (for extra flavor)
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
1️⃣ Prep the Potatoes:
- Wash and dice the potatoes into small cubes (leave the skin on for extra crispiness).
- Soak the diced potatoes in cold water for 5-10 minutes to remove excess starch. Drain and pat dry.
2️⃣ Cook to Perfection:
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes and spread them evenly. Let them cook without stirring for 3-4 minutes to develop a crispy crust.
3️⃣ Season & Sauté:
- Sprinkle garlic powder, onion powder, smoked paprika, salt, black pepper, and oregano over the potatoes.
- Stir and continue cooking for 10-12 minutes, stirring occasionally until golden brown and tender.
- Add butter during the last 2 minutes for extra flavor.
4️⃣ Garnish & Serve:
- Remove from heat and sprinkle with fresh parsley.
- Serve hot with eggs, bacon, or your favorite breakfast dish

✔️ For extra crispiness, bake at 425°F (220°C) for 25-30 minutes instead of pan-frying.
