  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ½ tsp dried oregano (optional)
  • ¼ tsp red pepper flakes (optional, for a spicy kick)
  • 1 tbsp butter (for extra flavor)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

1️⃣ Prep the Potatoes:

  • Wash and dice the potatoes into small cubes (leave the skin on for extra crispiness).
  • Soak the diced potatoes in cold water for 5-10 minutes to remove excess starch. Drain and pat dry.

2️⃣ Cook to Perfection:

  • Heat olive oil in a large skillet over medium-high heat.
  • Add potatoes and spread them evenly. Let them cook without stirring for 3-4 minutes to develop a crispy crust.

3️⃣ Season & Sauté:

  • Sprinkle garlic powder, onion powder, smoked paprika, salt, black pepper, and oregano over the potatoes.
  • Stir and continue cooking for 10-12 minutes, stirring occasionally until golden brown and tender.
  • Add butter during the last 2 minutes for extra flavor.

4️⃣ Garnish & Serve:

  • Remove from heat and sprinkle with fresh parsley.
  • Serve hot with eggs, bacon, or your favorite breakfast dish

✔️ For extra crispiness, bake at 425°F (220°C) for 25-30 minutes instead of pan-frying.
