- 2 cups cauliflower florets
- 4 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 2 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp butter
- Salt and pepper to taste
Instructions
- Sauté: In a large pot, melt butter over medium heat. Add diced onion and garlic, and sauté until fragrant.
- Cook Vegetables: Add broccoli, cauliflower, and broth. Cover and simmer for 15 minutes until vegetables are tender.
- Blend: Use an immersion blender to puree the soup to your desired consistency.
- Add Cream and Cheese: Stir in heavy cream and shredded cheese until melted and smooth. Season with salt and pepper.
- Serve: Top with crispy bacon crumbles and enjoy warm!
