Ingredients

  • 4 large russet potatoes, peeled and diced

  • 1 tbsp olive oil

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 1 bell pepper, chopped

  • 1 celery stalk, chopped

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 tsp Cajun seasoning

  • 1/2 tsp smoked paprika

  • 1/4 tsp cayenne pepper (optional, for extra heat)

  • Salt and pepper, to taste

  • 1/2 cup shredded cheddar cheese (optional)

  • Fresh parsley or green onions, chopped, for garnish


Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and celery, and sauté for 4-5 minutes until softened.

  • Add minced garlic and cook for another 1 minute until fragrant.

  • Pour in chicken broth and bring the mixture to a boil. Add the diced potatoes and simmer for 10-12 minutes, until the potatoes are tender.

  • Use a potato masher or an immersion blender to mash some of the potatoes, leaving some chunks for texture.

  • Stir in heavy cream, Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for an additional 5-7 minutes until the soup thickens.

  • Taste and adjust seasoning if needed.

  • Serve the soup hot, topped with shredded cheddar cheese and garnished with fresh parsley or green onions.

Notes

  • If you prefer a smoother texture, you can blend the entire soup.

  • Add cooked sausage or bacon for extra protein and flavor.

  • For a lighter version, use half-and-half or milk instead of heavy cream.
