Ingredients

4 large russet potatoes, peeled and diced

1 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

1 bell pepper, chopped

1 celery stalk, chopped

4 cups chicken broth

1 cup heavy cream

1 tsp Cajun seasoning

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional, for extra heat)

Salt and pepper, to taste

1/2 cup shredded cheddar cheese (optional)

Fresh parsley or green onions, chopped, for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onion, bell pepper, and celery, and sauté for 4-5 minutes until softened.

Add minced garlic and cook for another 1 minute until fragrant.

Pour in chicken broth and bring the mixture to a boil. Add the diced potatoes and simmer for 10-12 minutes, until the potatoes are tender.

Use a potato masher or an immersion blender to mash some of the potatoes, leaving some chunks for texture.

Stir in heavy cream, Cajun seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper. Cook for an additional 5-7 minutes until the soup thickens.
