For the crust:

  • 1 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 16 oz (2 packages) cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

For the topping:

  • 1/2 cup caramel sauce (store-bought or homemade)

  • Optional: sea salt flakes for garnish


Instructions

  • Preheat oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper.

  • Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan. Bake for 8 minutes.

  • Prepare the filling: In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over the crust.

  • Bake for 30–35 minutes or until the center is set. Cool completely.

  • Top with caramel sauce, spreading evenly. Chill for at least 2 hours before slicing into bars. Garnish with sea salt flakes if desired.

Notes

  • For best slicing, chill overnight and wipe the knife between cuts.

  • Use dulce de leche for an extra-rich caramel layer.
