Ingredients
For the crust:

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted
For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 tsp vanilla extract
For the topping:

1/2 cup caramel sauce (store-bought or homemade)

Instructions

Preheat oven to 325°F (163°C). Line an 8×8 inch baking pan with parchment paper.

Make the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan. Bake for 8 minutes.

Prepare the filling: In a bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla. Pour over the crust.

Bake for 30–35 minutes or until the center is set. Cool completely.

Top with caramel sauce, spreading evenly. Chill for at least 2 hours before slicing into bars. Garnish with sea salt flakes if desired.
