Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 tbsp olive oil

  • 2 cups mushrooms, sliced

  • 2 cups fresh spinach

  • 2 cloves garlic, minced

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ cup heavy cream

  • ½ cup shredded mozzarella cheese

  • ¼ cup grated Parmesan cheese

  • 1 tsp Italian seasoning


Instructions

  • Preheat oven to 375°F (190°C). Grease a baking dish.

  • In a skillet, heat olive oil over medium heat. Add chicken, season with salt, pepper, and paprika, and cook until golden (about 5 minutes). Remove and set aside.

  • In the same skillet, sauté mushrooms and garlic until soft. Add spinach and cook until wilted.

  • Stir in heavy cream, mozzarella, Parmesan, and Italian seasoning. Let simmer for 2 minutes.

  • Transfer the chicken to the baking dish, pour the creamy spinach-mushroom mixture over it, and bake for 20 minutes until bubbly.

  • Serve warm and enjoy!

Notes

  • Substitute heavy cream with cream cheese for extra thickness.

  • Add red pepper flakes for a spicy kick.
