Ingredients

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 tbsp olive oil

2 cups mushrooms, sliced

2 cups fresh spinach

2 cloves garlic, minced

½ tsp salt

½ tsp black pepper

½ tsp paprika

½ cup heavy cream
-
½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

1 tsp Italian seasoning
Instructions

Preheat oven to 375°F (190°C). Grease a baking dish.

In a skillet, heat olive oil over medium heat. Add chicken, season with salt, pepper, and paprika, and cook until golden (about 5 minutes). Remove and set aside.

In the same skillet, sauté mushrooms and garlic until soft. Add spinach and cook until wilted.

Stir in heavy cream, mozzarella, Parmesan, and Italian seasoning. Let simmer for 2 minutes.

Transfer the chicken to the baking dish, pour the creamy spinach-mushroom mixture over it, and bake for 20 minutes until bubbly.
