  • 1/4 tsp paprika

Instructions

  1. Prepare the Chicken:
    • Season the chicken breasts with paprika, salt, and pepper on both sides.
  2. Sear the Chicken:
    • Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.
  3. Make the Sauce:
    • Reduce the heat to medium and add the chicken broth to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
    • Stir in the heavy cream and Boursin cheese, whisking until the cheese is melted and the sauce is smooth and creamy.
  4. Combine Chicken and Sauce:
    • Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for 2-3 minutes to warm everything through.
  5. Serve and Enjoy:
    • Transfer the chicken to a serving plate and pour the Boursin sauce over the top. Garnish with fresh parsley if desired. Serve with rice, mashed potatoes, or steamed vegetables.
