- 2 tbsp olive oil
- 1 tbsp unsalted butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 (5.2 oz) package of Boursin cheese (Garlic & Fine Herbs flavor)
- 1/4 tsp paprika
- Salt and black pepper, to taste
- 1 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Prepare the Chicken:
- Season the chicken breasts with paprika, salt, and pepper on both sides.
- Sear the Chicken:
- Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through (internal temperature of 165°F/74°C). Remove the chicken from the skillet and set aside.
- Make the Sauce:
- Reduce the heat to medium and add the chicken broth to the skillet, scraping up any browned bits from the bottom. Let it simmer for 2 minutes.
- Stir in the heavy cream and Boursin cheese, whisking until the cheese is melted and the sauce is smooth and creamy.
- Combine Chicken and Sauce:
- Return the chicken breasts to the skillet and spoon the sauce over them. Simmer for 2-3 minutes to warm everything through.
- Serve and Enjoy:
- Transfer the chicken to a serving plate and pour the Boursin sauce over the top. Garnish with fresh parsley if desired. Serve with rice, mashed potatoes, or steamed vegetables.

- For a lighter version, substitute heavy cream with half-and-half or milk.
