Instructions

1️⃣ Make the Cookie Dough:

  • In a bowl, whisk together flour, baking powder, and salt.
  • In another bowl, beat the butter and sugar until light and fluffy (about 2 minutes).
  • Add the egg and vanilla extract, mixing until combined.
  • Gradually add the dry ingredients, beating until a soft dough forms.

2️⃣ Roll & Fill:

  • Roll out the dough on a floured surface into a rectangle (~¼ inch thick).
  • Brush the melted butter over the dough.
  • Sprinkle the brown sugar and cinnamon evenly across the surface.

3️⃣ Roll & Chill:

  • Roll the dough tightly into a log, like a cinnamon roll.
  • Wrap in plastic wrap and refrigerate for at least 30 minutes to firm up.

4️⃣ Slice & Bake:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Slice the chilled dough into ¼-inch thick rounds.
  • Place on the baking sheet, spacing them about 2 inches apart.
  • Bake for 10-12 minutes, or until the edges are lightly golden.
  • Let cool completely on a wire rack.

5️⃣ Glaze & Serve:

  • Whisk together powdered sugar, milk, and vanilla to make the glaze.
  • Drizzle over the cooled cookies.
