Ingredients
For the Cookies:
- 2 ¾ cups all-purpose flour
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 ½ tsp vanilla extract
For the Cinnamon Filling:
- 3 tbsp unsalted butter, melted
- ¼ cup brown sugar
- 1 tbsp ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2 tbsp milk
- ½ tsp vanilla extract
Instructions
1️⃣ Make the Cookie Dough:
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat the butter and sugar until light and fluffy (about 2 minutes).
- Add the egg and vanilla extract, mixing until combined.
- Gradually add the dry ingredients, beating until a soft dough forms.
2️⃣ Roll & Fill:
- Roll out the dough on a floured surface into a rectangle (~¼ inch thick).
- Brush the melted butter over the dough.
- Sprinkle the brown sugar and cinnamon evenly across the surface.
3️⃣ Roll & Chill:
- Roll the dough tightly into a log, like a cinnamon roll.
- Wrap in plastic wrap and refrigerate for at least 30 minutes to firm up.
4️⃣ Slice & Bake:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Slice the chilled dough into ¼-inch thick rounds.
- Place on the baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Let cool completely on a wire rack.
5️⃣ Glaze & Serve:
- Whisk together powdered sugar, milk, and vanilla to make the glaze.
- Drizzle over the cooled cookies.
