Ingredients

- 2 cups shredded cooked chicken
- 4 cups chicken broth
- 1 cup milk or heavy cream
- 1 ½ cups corn (fresh, frozen, or canned)
- 1 small onion (chopped)
- 2 cloves garlic (minced)
- 2 tbsp butter
- 2 tbsp flour
- ½ tsp dried thyme
- Salt & pepper to taste
- Chopped parsley for garnish
Instructions
- Sauté Aromatics: In a pot, melt butter and sauté onion and garlic until fragrant.
- Make the Base: Stir in flour, then slowly add broth, stirring continuously.
- Simmer & Add Ingredients: Add chicken, corn, thyme, salt, and pepper. Simmer for 10 minutes.
- Finish with Cream: Stir in milk or cream, heat for another 2 minutes, then serve garnished with parsley.
Notes
- Add crispy bacon for extra flavor.
- Blend half the soup for a thicker consistency.
