Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

2 tbsp butter

8 oz (225 g) mushrooms, sliced

3 garlic cloves, minced

1 cup heavy cream

½ cup chicken broth
-
½ tsp dried thyme
-
½ tsp black pepper

Salt, to taste

Fresh parsley, chopped (optional)
Instructions

Season chicken with salt and pepper.

In a large skillet, heat olive oil over medium heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.

In the same skillet, melt butter. Add mushrooms and cook until browned.

Stir in garlic and thyme, cooking for 1 minute.

Pour in chicken broth and heavy cream. Simmer for 3–5 minutes until slightly thickened.

Return chicken to the pan and coat with the sauce. Simmer for another 2–3 minutes.

Garnish with parsley and serve hot.
