For the Chicken:

  • 4 boneless, skinless chicken thighs or breasts

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

  • Salt & pepper, to taste

  • 2 tbsp olive oil or butter

For the Cream Sauce:

  • 2 tbsp butter

  • 1 small onion, finely diced

  • 3 garlic cloves, minced

  • 2 tbsp all-purpose flour

  • 1 1/2 cups chicken broth

  • 1 cup heavy cream (or half-and-half)

  • 1/2 tsp thyme (optional)

  • Salt & pepper, to taste

For Serving:

  • 3 cups cooked white or brown rice

  • Fresh parsley, chopped (for garnish)


Instructions

  • Season & Sear Chicken: Season chicken with paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet and sear chicken on both sides until golden (about 4–5 minutes per side). Remove and set aside.

  • Make the Sauce: In the same skillet, melt butter. Add onions and garlic, sauté until softened. Stir in flour and cook for 1 minute.

  • Gradually whisk in chicken broth and cream. Bring to a simmer and cook until slightly thickened (4–5 minutes). Add thyme if using.

  • Smother the Chicken: Return chicken to the pan and simmer in the sauce for 8–10 minutes until fully cooked and tender.

  • Serve over warm rice, spooning extra sauce on top. Garnish with parsley.

Notes

  • Add mushrooms, peas, or spinach for extra veggies.

  • Swap heavy cream for milk to lighten the dish.

  • Great with mashed potatoes or egg noodles, too!
