Ingredients

Scale

For the Chicken Tenders:

  • 1 pound chicken tenders (or chicken breast cut into strips)

  • 1 cup panko breadcrumbs (for extra crispiness)

  • 1/2 cup parmesan cheese, grated

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon paprika

  • Salt and black pepper, to taste

  • 1/2 cup all-purpose flour

  • 2 large eggs, beaten

  • 2 tablespoons olive oil (for drizzling)

For the Creamy Mustard Dip:

  • 1/4 cup mayonnaise

  • 2 tablespoons whole grain mustard

  • 1 tablespoon honey

  • 1 teaspoon lemon juice

  • Salt and black pepper, to taste

Instructions

  • Preheat the oven:

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

  • Prepare the breading station:

    • In a shallow dish, combine the panko breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

    • In a separate shallow dish, place the flour.

    • In another dish, beat the eggs.

  • Coat the chicken:

    • Dredge each chicken tender first in the flour, shaking off any excess.

    • Dip it into the egg mixture, then coat it thoroughly in the breadcrumb mixture, pressing down gently to ensure it sticks.

  • Bake the chicken tenders:

    • Arrange the coated chicken tenders in a single layer on the prepared baking sheet.

    • Drizzle olive oil over the tenders for extra crispiness.

    • Bake for 25-30 minutes, flipping halfway through, until the tenders are golden brown and cooked through (internal temperature should reach 165°F/74°C).

  • Prepare the creamy mustard dip:

    • In a small bowl, whisk together the mayonnaise, whole grain mustard, honey, and lemon juice. Season with salt and pepper to taste.

  • Serve:

    • Serve the crispy baked chicken tenders with the creamy mustard dip on the side for dipping.

Notes

  • For an extra crispy coating, try adding some cornmeal to the breadcrumb mixture.

  • You can make the dip spicier by adding a small amount of hot sauce or Dijon mustard.

  • If you want to make the tenders ahead of time, you can freeze them after breading and bake them straight from the freezer (just add an extra 5 minutes to the baking time).
