For the Fried Cod:
- 4 cod fillets (4–6 oz each)
- 1 cup all-purpose flour
- 1 cup panko breadcrumbs
- ½ cup cornmeal (for extra crunch)
- 2 eggs, beaten
- ½ cup buttermilk
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- Vegetable oil (for frying)
For the Sandwich:
- 4 brioche or sandwich buns, toasted
- ½ cup tartar sauce
- 1 cup shredded lettuce
- 1 tomato, sliced
- 4 pickle slices (optional)
Instructions
- Prepare the dredging station: In one bowl, mix flour, garlic powder, paprika, salt, and pepper. In another, whisk eggs with buttermilk. In a third bowl, combine panko and cornmeal.
- Coat the fish: Dredge each fillet in the flour mixture, dip in the egg mixture, then coat with the panko-cornmeal mix.
- Fry the cod: Heat about 2 inches of vegetable oil in a pan to 350°F (175°C). Fry each fillet for 3-4 minutes per side, or until golden brown and crispy. Drain on paper towels.
- Assemble the sandwich: Spread tartar sauce on the toasted buns, add lettuce, tomato, and pickles. Place the crispy cod fillet on top and close the sandwich.
- Serve immediately with fries or coleslaw on the side.
Notes
- For a lighter version, bake the fish at 400°F (200°C) for 15-18 minutes or air fry at 375°F (190°C) for 12 minutes.
- Add a spicy kick by mixing sriracha into the tartar sauce.
- Try a slaw topping for extra crunch and flavor.
