- 1 large cucumber, thinly sliced
- 8 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1 tsp lemon juice
- 1/2 tsp garlic powder
- 1 tbsp fresh dill, chopped (or 1 tsp dried dill)
- Salt and pepper, to taste
- 12 slices of white or whole wheat bread
- Optional garnish: Fresh dill sprigs
Instructions
- Prepare the Cucumber:
- Slice the cucumber thinly using a mandoline or sharp knife. Pat dry with paper towels to remove excess moisture.
- Make the Creamy Spread:
- In a bowl, combine cream cheese, mayonnaise, lemon juice, garlic powder, and dill. Mix until smooth and well blended. Season with salt and pepper to taste.
- Assemble the Sandwiches:
- Spread an even layer of the cream cheese mixture on one side of each slice of bread.
- Arrange cucumber slices on half of the bread slices, slightly overlapping them.
- Top with the remaining slices of bread, spread side down.
- Trim and Cut:
- Using a serrated knife, trim off the crusts for a neater appearance.
- Cut each sandwich into halves or quarters, either diagonally or into rectangles.
- Serve and Enjoy:
- Arrange the cucumber sandwiches on a serving platter. Garnish with fresh dill sprigs if desired.
Notes
- For a twist, add thin slices of smoked salmon or a sprinkle of everything bagel seasoning.
- Use whole wheat bread for a heartier version.
- To prevent sogginess, assemble just before serving or use a thin layer of butter under the spread.
