- 2 chicken breasts, cooked and shredded
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup salsa
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 flour tortillas (10-inch)
- 2 tablespoons olive oil (for frying)
- Salt and pepper to taste
- Optional toppings: guacamole, salsa, lettuce, jalapeños
Instructions
- Prepare the filling:
- In a bowl, mix the shredded chicken, cheddar cheese, sour cream, salsa, cumin, chili powder, salt, and pepper.
- Assemble the chimichangas:
- Lay the tortillas flat, then place a quarter of the chicken mixture in the center of each tortilla. Fold in the sides and roll up tightly.
- Fry the chimichangas:
- Heat olive oil in a large skillet over medium heat. Fry each chimichanga, seam side down, for about 3-4 minutes per side, or until golden brown and crispy.
- Serve:
- Remove from the skillet and drain on paper towels. Top with your choice of guacamole, salsa, lettuce, or jalapeños for added flavor.
