  • 2 cups cooked shredded chicken
  • 8 small flour or corn tortillas
  • 1 ½ cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ cup sour cream (optional)
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  • Preheat Oven: Set oven to 375°F (190°C).
  • Prepare Filling: In a pan, sauté onion and garlic. Add shredded chicken, chili powder, cumin, salt, and pepper. Stir in ½ cup enchilada sauce and mix well.
  • Assemble Enchiladas: Place a scoop of the chicken mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  • Add Sauce & Cheese: Pour remaining enchilada sauce over the rolled tortillas and sprinkle with both cheeses.
  • Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly.
  • Serve: Garnish with cilantro and serve with sour cream or guacamole. Enjoy!
