- 2 cups cooked shredded chicken
- 8 small flour or corn tortillas
- 1 ½ cups enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp salt
- ½ tsp black pepper
- ½ cup sour cream (optional)
- 2 tbsp fresh cilantro, chopped (for garnish)
Instructions
- Preheat Oven: Set oven to 375°F (190°C).
- Prepare Filling: In a pan, sauté onion and garlic. Add shredded chicken, chili powder, cumin, salt, and pepper. Stir in ½ cup enchilada sauce and mix well.
- Assemble Enchiladas: Place a scoop of the chicken mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Add Sauce & Cheese: Pour remaining enchilada sauce over the rolled tortillas and sprinkle with both cheeses.
- Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for another 5 minutes until cheese is bubbly.
- Serve: Garnish with cilantro and serve with sour cream or guacamole. Enjoy!
