Ingredients

  • 1 cup uncooked basmati or jasmine rice

  • 1 ½ cups chicken broth

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 cup tzatziki sauce

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 cup cherry tomatoes, halved

  • ½ small red onion, sliced

  • ¼ cup crumbled feta cheese (optional)

  • 1 tbsp olive oil


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a baking dish.

  • Spread uncooked rice evenly in the dish and pour in the chicken broth.

  • Add chicken pieces on top and season with garlic powder, oregano, salt, and pepper.

  • Spread tzatziki sauce evenly over the chicken. Scatter cherry tomatoes and red onion on top.

  • Drizzle with olive oil, cover tightly with foil, and bake for 35 minutes.

  • Remove foil, sprinkle with feta (if using), and bake uncovered for another 5 minutes.

  • Let rest for a few minutes before serving.
