Ingredients

1 cup uncooked basmati or jasmine rice

1 ½ cups chicken broth

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 cup tzatziki sauce

1 tsp garlic powder

1 tsp dried oregano

½ tsp salt

½ tsp black pepper

1 cup cherry tomatoes, halved

½ small red onion, sliced

¼ cup crumbled feta cheese (optional)

1 tbsp olive oil
Instructions

Preheat oven to 375°F (190°C). Lightly grease a baking dish.

Spread uncooked rice evenly in the dish and pour in the chicken broth.

Add chicken pieces on top and season with garlic powder, oregano, salt, and pepper.

Spread tzatziki sauce evenly over the chicken. Scatter cherry tomatoes and red onion on top.

Drizzle with olive oil, cover tightly with foil, and bake for 35 minutes.

Remove foil, sprinkle with feta (if using), and bake uncovered for another 5 minutes.
