- Salt & pepper to taste
- 1 cup cooked rice (white or brown)
- 1/2 lemon, zest
- 1 tbsp chopped fresh parsley (for garnish)
- Tzatziki sauce (optional for serving)
Instructions
- Marinate the Chicken: In a bowl, mix chicken cubes with olive oil, lemon juice, oregano, garlic powder, cumin, salt, and pepper. Let marinate for at least 30 minutes (or up to 4 hours).

- Make the Lemon Rice: Stir lemon zest into warm rice and garnish with parsley.
