  • 500 g ground beef
  • 1 cup quinoa (rinsed)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (400 g) diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 2 cups beef or vegetable broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  • Cook the quinoa: In a medium saucepan, combine quinoa and broth. Bring to a boil, then reduce to a simmer and cover. Cook for 12-15 minutes, or until the quinoa is tender and the liquid is absorbed.
  • Cook the beef: While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
  • Add vegetables and spices: Add the diced onion, bell pepper, and garlic to the skillet. Cook for 4-5 minutes until the vegetables are soft. Stir in the cumin, chili powder, smoked paprika, salt, and pepper.
  • Combine with tomatoes and quinoa: Stir in the diced tomatoes (with juice) and cooked quinoa. Let everything simmer together for 5 minutes to allow the flavors to meld.
  • Serve: Garnish with fresh cilantro or parsley, and serve hot.

Notes

  • For extra heat, add a chopped jalapeño or some red pepper flakes.
  • You can swap the ground beef with ground turkey or chicken for a leaner option.
