- 500 g ground beef
- 1 cup quinoa (rinsed)
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (400 g) diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 2 cups beef or vegetable broth
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Cook the quinoa: In a medium saucepan, combine quinoa and broth. Bring to a boil, then reduce to a simmer and cover. Cook for 12-15 minutes, or until the quinoa is tender and the liquid is absorbed.
- Cook the beef: While the quinoa is cooking, heat olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
- Add vegetables and spices: Add the diced onion, bell pepper, and garlic to the skillet. Cook for 4-5 minutes until the vegetables are soft. Stir in the cumin, chili powder, smoked paprika, salt, and pepper.
- Combine with tomatoes and quinoa: Stir in the diced tomatoes (with juice) and cooked quinoa. Let everything simmer together for 5 minutes to allow the flavors to meld.
- Serve: Garnish with fresh cilantro or parsley, and serve hot.
Notes
- For extra heat, add a chopped jalapeño or some red pepper flakes.
- You can swap the ground beef with ground turkey or chicken for a leaner option.
