This Elote Pasta Salad combines the bold flavors of Mexican street corn with tender pasta, creamy dressing, and a hint of spice. It’s the perfect side dish for BBQs, picnics, or any gathering!
Ingredients

- 8 oz pasta (rotini or bowtie)
- 2 cups corn (grilled or canned, drained)
- ½ cup mayonnaise
- ½ cup sour cream (or Greek yogurt)
- Juice of 1 lime
- ½ tsp chili powder
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ cup crumbled cotija cheese (or feta)
- ¼ cup fresh cilantro, chopped
- ½ small red onion, finely diced
- Salt & pepper, to taste
Instructions
- Cook the Pasta:
- Boil pasta according to package instructions, drain, and rinse under cold water.
- Prepare the Dressing:
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
- Assemble the Salad:
- In a large bowl, combine pasta, corn, red onion, and dressing. Mix well.
- Fold in cotija cheese and cilantro.
- Chill & Serve:
- Let sit for 15 minutes before serving to enhance flavors.
Notes
- Add diced jalapeño for extra spice.
- Use Tajín seasoning for a zesty kick!
- For a protein boost, toss in grilled chicken or shrimp.
