  • 3 large eggs, separated

  • 1/4 tsp cream of tartar

  • 1/4 tsp garlic powder (optional)

  • Salt, to taste

  • Fresh herbs, like rosemary or thyme, for garnish (optional)


Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, blend the cottage cheese until smooth using a hand blender or food processor.

  3. In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.

  4. In another bowl, whisk the egg yolks with garlic powder (if using) and salt until well combined.

  5. Gently fold the egg yolk mixture into the blended cottage cheese, then fold in the beaten egg whites until fully combined. Be careful not to deflate the mixture.

  6. Spoon the mixture onto the prepared baking sheet to form 6-8 rounds (about 3 inches wide).

  7. Bake in the preheated oven for 25-30 minutes, or until golden brown and firm to the touch.

  8. Let the cloud bread cool on a wire rack before serving. Garnish with fresh herbs if desired.
