Description
A Light, Fluffy, and Delicious Alternative to Traditional Bread
Cottage cheese cloud bread is airy, soft, and incredibly easy to make. It’s perfect for anyone looking for a low-carb or gluten-free snack, and it’s versatile enough to be used for sandwiches or enjoyed on its own.
Ingredients
-
1 cup cottage cheese (drained)
-
3 large eggs, separated
-
1/4 tsp cream of tartar
-
1/4 tsp garlic powder (optional)
-
Salt, to taste
-
Fresh herbs, like rosemary or thyme, for garnish (optional)
Instructions
-
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
-
In a large mixing bowl, blend the cottage cheese until smooth using a hand blender or food processor.
-
In a separate bowl, beat the egg whites with cream of tartar until stiff peaks form.
-
In another bowl, whisk the egg yolks with garlic powder (if using) and salt until well combined.
-
Gently fold the egg yolk mixture into the blended cottage cheese, then fold in the beaten egg whites until fully combined. Be careful not to deflate the mixture.
-
Spoon the mixture onto the prepared baking sheet to form 6-8 rounds (about 3 inches wide).
-
Bake in the preheated oven for 25-30 minutes, or until golden brown and firm to the touch.
-
Let the cloud bread cool on a wire rack before serving. Garnish with fresh herbs if desired.
Notes
-
You can use the cloud bread for sandwiches or serve it as a snack with dips.
-
If you prefer a sweeter version, you can add a pinch of cinnamon or a bit of sweetener to the mixture.
-
Store leftovers in an airtight container at room temperature for 1-2 days or in the fridge for up to a week.
