- 2 large chicken breasts, diced
- 3 medium potatoes, cubed
- 3 tbsp butter
- 3 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- ¼ cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions

Cook the potatoes:
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Add potatoes, season with salt, pepper, and paprika, and cook until golden and tender (about 10 minutes). Remove and set aside.

Sauté the chicken:
- In the same skillet, add another 1 tbsp olive oil.
- Add chicken, season with oregano, salt, and pepper, and cook until browned and cooked through (6-8 minutes). Remove and set aside.

Make the garlic butter sauce:
- Reduce heat to low, add butter and garlic, and sauté until fragrant (1 minute).
- Pour in chicken broth, stir, and let simmer for 2 minutes.

Combine and serve:
- Return potatoes and chicken to the skillet, toss to coat in the sauce.
- Garnish with fresh parsley and serve warm.
Notes
- Swap chicken breast for chicken thighs for extra juiciness.
- Add red pepper flakes for a spicy kick!
- Serve with a side of roasted veggies or a fresh salad.
