Ingredients

  • 2 large chicken breasts, diced
  • 3 medium potatoes, cubed
  • 3 tbsp butter
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • ¼ cup chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the potatoes:

    • Heat 1 tbsp olive oil in a skillet over medium heat.
    • Add potatoes, season with salt, pepper, and paprika, and cook until golden and tender (about 10 minutes). Remove and set aside.
  • Sauté the chicken:

    • In the same skillet, add another 1 tbsp olive oil.
    • Add chicken, season with oregano, salt, and pepper, and cook until browned and cooked through (6-8 minutes). Remove and set aside.
  • Make the garlic butter sauce:

    • Reduce heat to low, add butter and garlic, and sauté until fragrant (1 minute).
    • Pour in chicken broth, stir, and let simmer for 2 minutes.
  • Combine and serve:

    • Return potatoes and chicken to the skillet, toss to coat in the sauce.
    • Garnish with fresh parsley and serve warm.

Notes

  • Swap chicken breast for chicken thighs for extra juiciness.
  • Add red pepper flakes for a spicy kick!
  • Serve with a side of roasted veggies or a fresh salad.
