Ingredients

  • 1 ½ lbs boneless, skinless chicken breast (or thighs), cut into bite-sized pieces
  • 1 ½ lbs baby potatoes, halved
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt & black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp lemon juice
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

1️⃣ Prepare the Potatoes – Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add potatoes, season with salt, pepper, and paprika, and cook for 10-12 minutes, stirring occasionally, until golden and fork-tender. Remove and set aside.

2️⃣ Cook the Chicken – In the same skillet, add 1 tbsp olive oil and chicken pieces. Season with Italian seasoning, salt, and red pepper flakes. Sear for 5-7 minutes, stirring occasionally, until golden brown and cooked through.

3️⃣ Make the Garlic Butter Sauce – Reduce heat to medium, add butter and garlic to the skillet, and sauté for 1 minute until fragrant.

4️⃣ Combine Everything – Return potatoes to the skillet, drizzle with lemon juice, and toss to coat in the garlic butter sauce.

5️⃣ Serve & Enjoy! – Garnish with fresh parsley and serve hot.

Notes

Extra crispy potatoes? Roast them in the oven at 400°F (200°C) for 25 minutes before adding to the skillet.
Spice it up! Add more red pepper flakes or a dash of hot sauce.
Make it cheesy! Sprinkle Parmesan over the top before serving.
