Tender Chicken with a Creamy Garlic Butter Sauce and Fresh Vegetables
This dish combines juicy chicken with a rich garlic butter sauce, paired with the sweetness of corn and the freshness of zucchini. It’s a simple yet indulgent meal that’s perfect for a weeknight dinner.
Ingredients

4 boneless, skinless chicken breasts

2 tbsp olive oil

4 tbsp butter, divided

4 garlic cloves, minced

1 medium zucchini, sliced

1 cup corn kernels (fresh or frozen)

Salt and pepper, to taste

1 tsp dried thyme (or fresh thyme, chopped)

1/2 cup chicken broth or white wine

Fresh parsley, chopped, for garnish (optional)
Instructions

Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt and pepper on both sides.

Cook chicken for 5–6 minutes on each side, or until golden and cooked through. Remove from skillet and set aside.

In the same skillet, melt 2 tbsp of butter over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant.

Add sliced zucchini and corn to the skillet. Season with salt, pepper, and thyme. Sauté for 4–5 minutes, or until vegetables are tender.

Pour in chicken broth or white wine, scraping up any browned bits from the bottom of the skillet. Let simmer for 2 minutes to reduce slightly.

Return chicken to the skillet and add the remaining butter. Cook for an additional 2–3 minutes, basting the chicken with the sauce.

Garnish with fresh parsley and serve immediately.
