Ingredients

1 small head of cauliflower, cut into florets

1 lb mushrooms, sliced

3 cloves garlic, minced

2 tbsp olive oil

1 tbsp butter

1 tsp dried thyme (or fresh, if preferred)

Fresh parsley, chopped (for garnish)
Instructions

Preheat oven to 425°F (220°C).

Roast cauliflower: Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, until golden and tender.

Sauté mushrooms: While the cauliflower roasts, heat the remaining olive oil and butter in a skillet over medium heat. Add mushrooms and sauté for 5–7 minutes until browned.

Add garlic & thyme: Stir in minced garlic and dried thyme, cooking for another 1–2 minutes until fragrant.

Combine: Once cauliflower is roasted, add it to the skillet with mushrooms and toss gently to combine.
