Ingredients

  • 1 small head of cauliflower, cut into florets

  • 1 lb mushrooms, sliced

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp dried thyme (or fresh, if preferred)

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)


Instructions

  • Preheat oven to 425°F (220°C).

  • Roast cauliflower: Toss cauliflower florets with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, until golden and tender.

  • Sauté mushrooms: While the cauliflower roasts, heat the remaining olive oil and butter in a skillet over medium heat. Add mushrooms and sauté for 5–7 minutes until browned.

  • Add garlic & thyme: Stir in minced garlic and dried thyme, cooking for another 1–2 minutes until fragrant.

  • Combine: Once cauliflower is roasted, add it to the skillet with mushrooms and toss gently to combine.

  • Garnish with fresh parsley and serve hot!

Notes

  • For extra richness, you can sprinkle with grated Parmesan cheese before serving.

  • This can be made vegan by omitting the butter and using more olive oil.
