Ingredients

1 lb (450g) beef fillet, sliced into thin strips

2 tbsp olive oil

1 onion, finely chopped

2 cloves garlic, minced

8 oz (225g) mushrooms, sliced

1 tbsp Dijon mustard

1/2 cup dry white wine

1 cup beef broth

1/2 cup sour cream

1/4 cup heavy cream

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

1 tbsp butter

Cooked egg noodles or rice, for serving
Instructions

Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

In the same skillet, add butter and sauté the chopped onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.

Add the sliced mushrooms to the skillet and cook until they soften, about 5 minutes.

Stir in the Dijon mustard and cook for 1 minute.

Pour in the white wine and let it reduce by half, about 3-4 minutes.

Add the beef broth and bring to a simmer. Cook for another 3-4 minutes, allowing the sauce to reduce slightly.

Reduce the heat to low and stir in the sour cream and heavy cream. Cook for 2-3 minutes, stirring until the sauce is smooth.

Return the cooked beef to the skillet, stir to coat with the sauce, and cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.

Serve the beef stroganoff over cooked egg noodles or rice, and garnish with fresh parsley.
