  • 1 cup beef broth

  • 1/2 cup sour cream

  • 1/4 cup heavy cream

  • Fresh parsley, chopped, for garnish

  • 1 tbsp butter

  • Cooked egg noodles or rice, for serving


Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

  • In the same skillet, add butter and sauté the chopped onion until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.

  • Add the sliced mushrooms to the skillet and cook until they soften, about 5 minutes.

  • Stir in the Dijon mustard and cook for 1 minute.

  • Pour in the white wine and let it reduce by half, about 3-4 minutes.

  • Add the beef broth and bring to a simmer. Cook for another 3-4 minutes, allowing the sauce to reduce slightly.

  • Reduce the heat to low and stir in the sour cream and heavy cream. Cook for 2-3 minutes, stirring until the sauce is smooth.

  • Return the cooked beef to the skillet, stir to coat with the sauce, and cook for an additional 2-3 minutes until heated through. Season with salt and pepper to taste.

  • Serve the beef stroganoff over cooked egg noodles or rice, and garnish with fresh parsley.

Notes

  • You can use other cuts of beef such as sirloin or flank steak for a more budget-friendly version.

  • For extra richness, you can add a splash of brandy or cognac to the sauce after the wine is reduced.
