For the Chimichurri Sauce:

  • 1/2 cup fresh parsley, finely chopped

  • 3 tablespoons red wine vinegar

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 teaspoon oregano (dried or fresh)

  • 1/2 teaspoon red pepper flakes (adjust to taste)

  • Salt and black pepper, to taste

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and black pepper, to taste


Instructions

  • Make the chimichurri sauce:

    • In a bowl, combine parsley, red wine vinegar, olive oil, garlic, oregano, red pepper flakes, salt, and pepper. Stir well until everything is mixed.

    • Set aside to let the flavors meld while you prepare the shrimp.

  • Prepare the shrimp:

    • In a separate bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until the shrimp are evenly coated.

  • Skewer the shrimp:

    • Thread the shrimp onto skewers, making sure they are evenly spaced. If you’re using wooden skewers, soak them in water for about 10 minutes beforehand to prevent burning.

  • Grill the shrimp:

    • Preheat your grill to medium-high heat.

    • Grill the shrimp for 2-3 minutes per side, or until they are opaque and have nice grill marks.

  • Serve:

    • Once the shrimp are cooked, remove them from the grill and drizzle with the chimichurri sauce.

    • Serve immediately with extra chimichurri sauce on the side for dipping.

Notes

  • For extra flavor, you can marinate the shrimp in some of the chimichurri sauce for 20-30 minutes before grilling.

  • If you don’t have a grill, you can cook the shrimp in a grill pan or on the stovetop.
