Ingredients

Instructions
Heat 1 tablespoon of olive oil in a large skillet over medium heat., Once hot, add 1 pound of ground beef. Break it up with your wooden spoon as you cook., Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Cook for about 5-7 minutes until browned., While the beef is cooking, peel and dice 4 medium-sized potatoes into small cubes., Rinse the potatoes under cold water and pat them dry to remove excess moisture., Once the beef is browned, add the 1 medium diced onion and 2 minced cloves of garlic. Stir until they become soft and fragrant, about 3-4 minutes., Then, add the diced potatoes to the skillet., Pour 1 cup of beef broth into the skillet and bring to a simmer., Cover the skillet with a lid and let it cook for 20-25 minutes, or until the potatoes are tender., Occasionally stir to ensure it doesn’t stick and all veggies cook evenly.
Notes
For a lighter option, ground beef can be replaced with ground turkey or chicken. Sweet potatoes are a nutritious alternative to regular potatoes.
