- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- ½ cup red bell pepper, diced
- ¼ cup red onion, finely chopped
- ¼ cup fresh cilantro, chopped
- 1 jalapeño, seeded & minced (optional)
- 2 tbsp lime juice
- 1 tbsp olive oil
- ½ tsp garlic powder
- Salt & black pepper to taste
Instructions
- In a large bowl, combine shrimp, avocado, tomatoes, bell pepper, red onion, cilantro, and jalapeño.
- In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and black pepper.
- Drizzle the dressing over the salad and gently toss to combine.
