  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeño, seeded & minced (optional)
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • Salt & black pepper to taste

Instructions

  • In a large bowl, combine shrimp, avocado, tomatoes, bell pepper, red onion, cilantro, and jalapeño.
  • In a small bowl, whisk together lime juice, olive oil, garlic powder, salt, and black pepper.
  • Drizzle the dressing over the salad and gently toss to combine.
