Ingredients
1 lb boneless, skinless chicken breasts, cut into bite-sized pieces, 2 tablespoons olive oil, 1 bell pepper, chopped (any color), 1 zucchini, sliced, 1 cup broccoli florets, 1 cup cherry tomatoes, halved, 2 cloves garlic, minced, 1 teaspoon dried oregano, Salt and pepper to taste, Fresh parsley for garnishing
Instructions
Start by gathering all your ingredients., Wash and chop the vegetables as mentioned in the ingredients list., Cut the chicken breasts into equal-sized pieces for even cooking., Mince the garlic using a knife or a garlic press., Heat the olive oil over medium-high heat in your skillet., Add the cut chicken to the skillet. You want the vegetables to be tender yet crisp., Lastly, add the halved cherry tomatoes. Cook for an additional minute, allowing them to warm but not mush., Taste the dish and adjust the seasoning if necessary, adding more salt, pepper, or olive oil based on your preference.
