For the Chicken:
- 500 g (1 lb) boneless, skinless chicken breasts (cut into bite-sized pieces)
- 1 cup (240 ml) buttermilk
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
For the Coating:
- 1 cup (125 g) all-purpose flour
- ½ cup (60 g) cornstarch
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- ½ tsp cayenne pepper (optional, for extra heat)
- 2 eggs (beaten)
- 1 cup (120 g) panko breadcrumbs (for extra crunch)
- Oil for frying
Instructions
- Marinate the Chicken: In a bowl, combine chicken, buttermilk, salt, pepper, garlic powder, and paprika. Let marinate for at least 30 minutes (or overnight for more flavor).
- Prepare the Breading Station: In one bowl, mix flour, cornstarch, salt, black pepper, paprika, and cayenne. In another bowl, beat the eggs. In a third bowl, place panko breadcrumbs.
- Coat the Chicken: Remove chicken from the marinade. Dredge each piece in the flour mixture, then dip in beaten eggs, and finally coat with panko.
- Fry Until Crispy: Heat oil in a deep pan to 350°F (175°C). Fry chicken in batches for 3-4 minutes or until golden brown and cooked through. Drain on a paper towel.
- Serve: Enjoy with dipping sauces like ranch, honey mustard, or spicy mayo!

- For baking: Bake at 400°F (200°C) for 18-20 minutes, flipping halfway.
- For air frying: Spray with oil and cook at 375°F (190°C) for 12-14 minutes.
