  • 1 cup (240 ml) buttermilk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika

For the Coating:

  • 1 cup (125 g) all-purpose flour
  • ½ cup (60 g) cornstarch
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp cayenne pepper (optional, for extra heat)
  • 2 eggs (beaten)
  • 1 cup (120 g) panko breadcrumbs (for extra crunch)
  • Oil for frying

Instructions

  • Marinate the Chicken: In a bowl, combine chicken, buttermilk, salt, pepper, garlic powder, and paprika. Let marinate for at least 30 minutes (or overnight for more flavor).
  • Prepare the Breading Station: In one bowl, mix flour, cornstarch, salt, black pepper, paprika, and cayenne. In another bowl, beat the eggs. In a third bowl, place panko breadcrumbs.
  • Coat the Chicken: Remove chicken from the marinade. Dredge each piece in the flour mixture, then dip in beaten eggs, and finally coat with panko.
  • Fry Until Crispy: Heat oil in a deep pan to 350°F (175°C). Fry chicken in batches for 3-4 minutes or until golden brown and cooked through. Drain on a paper towel.
