  • 1 lb corned beef, chopped

  • 1 cup Swiss cheese, shredded

  • 1 cup sauerkraut, drained and squeezed dry

  • 1/2 cup Russian dressing

  • 1/2 cup mayonnaise

  • 1/2 tsp caraway seeds (optional)

  • 1 loaf of day-old rye bread, cubed (about 6 cups)

  • 1 tbsp butter, melted

  • Salt and pepper, to taste

  • Fresh parsley, chopped, for garnish


Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

  • In a large bowl, combine chopped corned beef, shredded Swiss cheese, sauerkraut, Russian dressing, mayonnaise, and caraway seeds (if using). Mix until well combined.

  • Add the cubed rye bread to the mixture and toss to coat the bread evenly with the dressing and meat mixture.

  • Pour the entire mixture into the prepared baking dish and press down gently to pack it in. Drizzle the melted butter over the top.

  • Cover the baking dish with aluminum foil and bake for 25 minutes.

  • Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and crispy.

  • Garnish with fresh parsley and serve hot.

Notes

  • If you prefer a lighter version, you can use low-fat mayonnaise and Swiss cheese.
