This Homemade Reuben Bake brings together the rich flavors of corned beef, Swiss cheese, sauerkraut, and Russian dressing, all baked into a gooey, comforting casserole. It’s the perfect dish for a cozy dinner or a crowd-pleasing party snack!
Ingredients

1 lb corned beef, chopped

1 cup Swiss cheese, shredded

1 cup sauerkraut, drained and squeezed dry

1/2 cup Russian dressing

1/2 cup mayonnaise

1/2 tsp caraway seeds (optional)

1 loaf of day-old rye bread, cubed (about 6 cups)

1 tbsp butter, melted

Salt and pepper, to taste

Fresh parsley, chopped, for garnish
Instructions

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

In a large bowl, combine chopped corned beef, shredded Swiss cheese, sauerkraut, Russian dressing, mayonnaise, and caraway seeds (if using). Mix until well combined.

Add the cubed rye bread to the mixture and toss to coat the bread evenly with the dressing and meat mixture.

Pour the entire mixture into the prepared baking dish and press down gently to pack it in. Drizzle the melted butter over the top.

Cover the baking dish with aluminum foil and bake for 25 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and crispy.

If you prefer a lighter version, you can use low-fat mayonnaise and Swiss cheese.
