Instructions
In a mixing bowl, add the lemon juice, honey, Dijon mustard, salt, and black pepper., Slowly drizzle in the olive oil while continuously whisking to emulsify the dressing., Taste the vinaigrette and adjust seasoning with more salt or honey as needed., Store any leftover vinaigrette in a glass jar with a lid in the refrigerator for up to one week.
Notes
For a thicker vinaigrette, add more mustard. If too thick, a splash of water can help loosen it. Always shake before serving as separation is normal.
