Ingredients

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • ¼ cup fresh lemon juice

  • 1 tbsp lemon zest

  • ½ cup buttermilk (or milk)

For the Icing:

  • 1 cup powdered sugar

  • 2 tbsp fresh lemon juice

  • ½ tsp lemon zest


Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.

  • In a bowl, whisk flour, baking powder, baking soda, and salt.

  • In another bowl, cream together butter and sugar until fluffy. Add eggs, vanilla, lemon juice, and lemon zest, and mix well.

  • Gradually add dry ingredients to the wet ingredients, alternating with buttermilk, until just combined.

  • Pour batter into the prepared pan and bake for 40-45 minutes or until a toothpick comes out clean.

  • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.

  • For the icing, whisk together powdered sugar, lemon juice, and zest. Drizzle over the cooled loaf.

Notes

  • For extra lemon flavor, add a little lemon extract to the batter.

  • Store in an airtight container for up to 3 days.
