Ingredients
- 1 ½ cups Arborio rice
- 2 tbsp butter
- 2 tbsp olive oil
- 1 small shallot, finely chopped
- 3 cloves garlic, minced
- ½ cup white wine (optional)
- 4 cups seafood or chicken broth, warmed
- 1 cup cooked lobster meat, chopped
- ½ cup Parmesan cheese, grated
- Zest & juice of 1 lemon
- ½ tsp salt & ½ tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
1️⃣ In a pan, heat butter and olive oil over medium heat. Sauté shallots and garlic until soft.
2️⃣ Add Arborio rice and toast for 1-2 minutes. Pour in white wine and let it absorb.
3️⃣ Gradually add warm broth, ½ cup at a time, stirring continuously until absorbed before adding more. Repeat until the rice is creamy and tender (~20 minutes).
4️⃣ Stir in lobster meat, Parmesan cheese, lemon zest, lemon juice, salt, and pepper. Cook for another 2 minutes.
5️⃣ Garnish with parsley and serve immediately for the best texture!
