For the Lobster Tails:

  • 4 lobster tails
  • ¼ cup unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh parsley, chopped
  • Lemon wedges, for serving

For the Parmesan Potatoes:

  • 1 ½ lbs baby potatoes, halved
  • 2 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp Italian seasoning
  • ½ cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions

For the Parmesan Potatoes:

  1. Preheat Oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Season the Potatoes: In a bowl, toss halved potatoes with olive oil, garlic powder, salt, pepper, Italian seasoning, and Parmesan cheese.
  3. Roast: Spread potatoes on the baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway, until crispy and golden brown.

For the Lobster Tails:

  1. Prepare Lobster: Use kitchen shears to cut the top of each lobster shell lengthwise. Gently pull the meat out, placing it on top of the shell.
  2. Make Garlic Butter: Mix melted butter, garlic, lemon juice, lemon zest, paprika, salt, and pepper.
  3. Brush & Bake: Place lobster tails on a baking sheet. Brush generously with garlic butter. Bake at 400°F (200°C) for 10-12 minutes, or until lobster is opaque and cooked through.
  4. Garnish & Serve: Sprinkle with fresh parsley and serve with roasted Parmesan potatoes and lemon wedges.

Notes

  • For extra flavor, broil the lobster for the last 1-2 minutes to get a golden finish.
  • Swap baby potatoes for sweet potatoes for a slightly sweeter contrast.
