For the Lobster Tails:
- 4 lobster tails
- ¼ cup unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh parsley, chopped
- Lemon wedges, for serving
For the Parmesan Potatoes:
- 1 ½ lbs baby potatoes, halved
- 2 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp Italian seasoning
- ½ cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions
For the Parmesan Potatoes:
- Preheat Oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Season the Potatoes: In a bowl, toss halved potatoes with olive oil, garlic powder, salt, pepper, Italian seasoning, and Parmesan cheese.
- Roast: Spread potatoes on the baking sheet in a single layer. Roast for 25-30 minutes, flipping halfway, until crispy and golden brown.
For the Lobster Tails:
- Prepare Lobster: Use kitchen shears to cut the top of each lobster shell lengthwise. Gently pull the meat out, placing it on top of the shell.
- Make Garlic Butter: Mix melted butter, garlic, lemon juice, lemon zest, paprika, salt, and pepper.
- Brush & Bake: Place lobster tails on a baking sheet. Brush generously with garlic butter. Bake at 400°F (200°C) for 10-12 minutes, or until lobster is opaque and cooked through.
- Garnish & Serve: Sprinkle with fresh parsley and serve with roasted Parmesan potatoes and lemon wedges.
Notes
- For extra flavor, broil the lobster for the last 1-2 minutes to get a golden finish.
- Swap baby potatoes for sweet potatoes for a slightly sweeter contrast.
- Serve with a side of garlic butter for dipping!
