Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning
  • 10 oz pasta (fettuccine or penne)
  • Salt & black pepper to taste

Instructions

1️⃣ Cook the Pasta – Boil pasta in salted water until al dente, then drain.
2️⃣ Sear the Chicken – Season chicken with salt and pepper, then sear in olive oil over medium heat until golden and cooked through. Remove and slice.
3️⃣ Make the Sauce – In the same pan, sauté garlic, then add sun-dried tomatoes, heavy cream, chicken broth, parmesan, red pepper flakes, and Italian seasoning. Simmer until thick.
4️⃣ Combine & Serve – Toss in the pasta and sliced chicken, coating everything in the creamy sauce. Garnish with extra parmesan and fresh basil!

Notes

Want extra richness? Add a splash of white wine to the sauce!
Make it lighter by substituting half-and-half instead of heavy cream.
Goes great with garlic bread and a glass of white wine.
