  • 1 lb large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon red pepper flakes (optional)
  • 8 oz fettuccine or pasta of choice
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  • Cook the pasta:
    • Cook the pasta according to package instructions. Drain and set aside.
  • Cook the shrimp:
    • In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
  • Make the sauce:
    • In the same skillet, add minced garlic and sauté for 1 minute, until fragrant.
    • Pour in chicken broth and bring to a simmer. Stir in heavy cream and let it simmer for 3-4 minutes, until the sauce thickens slightly.
  • Combine pasta and shrimp:
    • Stir in grated Parmesan cheese and red pepper flakes (if using). Add the cooked pasta to the skillet and toss to coat in the sauce.
    • Return the shrimp to the skillet and toss again. Season with salt and pepper to taste.
  • Serve:
    • Garnish with fresh parsley and serve hot. Enjoy!
