- 1 lb large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon red pepper flakes (optional)
- 8 oz fettuccine or pasta of choice
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook the pasta:
- Cook the pasta according to package instructions. Drain and set aside.
- Cook the shrimp:
- In a large skillet, heat olive oil over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and cooked through. Remove shrimp from the skillet and set aside.
- Make the sauce:
- In the same skillet, add minced garlic and sauté for 1 minute, until fragrant.
- Pour in chicken broth and bring to a simmer. Stir in heavy cream and let it simmer for 3-4 minutes, until the sauce thickens slightly.
- Combine pasta and shrimp:
- Stir in grated Parmesan cheese and red pepper flakes (if using). Add the cooked pasta to the skillet and toss to coat in the sauce.
- Return the shrimp to the skillet and toss again. Season with salt and pepper to taste.
- Serve:
- Garnish with fresh parsley and serve hot. Enjoy!
