Ingredients

  • 4 salmon fillets
  • 1 tbsp olive oil
  • 1 lemon, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/4 cup red onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Preheat the oven to 200°C (400°F).
  • Prepare the salmon: Place the salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, oregano, and basil.
  • Add the toppings: Scatter the cherry tomatoes, olives, red onion, and garlic around the salmon fillets. Place lemon slices on top of the salmon.
