- 2 cups cooked, shredded chicken (rotisserie chicken works well)
- 1/2 cup salsa or taco sauce
- 1/2 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 12 mini taco shells or 6 small tortillas cut in half
- 1 cup shredded Mexican blend or cheddar cheese
- 1/4 cup chopped fresh cilantro (optional, for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Filling: In a mixing bowl, combine shredded chicken, salsa, chili powder, cumin, and garlic powder. Mix until evenly coated.
- Assemble the Tacos: Place a small amount of chicken mixture into each mini taco shell or folded tortilla. Top with shredded cheese. Arrange the tacos in a baking dish so they stand upright.
- Bake: Bake for 10-12 minutes, or until the cheese is melted and the taco shells are crispy.
- Serve: Remove from the oven and sprinkle with chopped cilantro, if desired. Serve warm with sour cream, guacamole, or extra salsa on the side.
Notes
- Add black beans or corn to the chicken mixture for extra texture and flavor.
