These Mini Baked Potatoes are the perfect bite-sized appetizer or side dish. Crispy on the outside, fluffy on the inside, and loaded with your favorite toppings, they’re sure to be a hit at any gathering.

- 1 lb baby potatoes (golden or red)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and freshly cracked black pepper to taste
- ½ cup sour cream
- 2 tbsp fresh chives, chopped (for garnish)
- ½ cup shredded cheddar cheese
- 4 slices of cooked bacon, crumbled
Instructions
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and pat dry the baby potatoes.
- Season and Bake:
- Toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper in a large mixing bowl.
- Spread the potatoes on a baking sheet lined with parchment paper. Bake for 25–30 minutes, or until the potatoes are golden and tender.
- Add Toppings:
- Once baked, let the potatoes cool slightly. Cut a small slit on top of each potato and gently press the sides to open them slightly.
- Fill each potato with a small dollop of sour cream, shredded cheddar cheese, crumbled bacon, and a sprinkle of chopped chives.
- Serve and Enjoy:
- Arrange on a serving platter and serve warm.
Notes
- For extra flavor, add a pinch of cayenne pepper to the seasoning mix.
- Customize the toppings to your preference—try guacamole, salsa, or even smoked salmon!
- These can be prepped ahead and reheated in the oven before serving.
