  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt and freshly cracked black pepper to taste
  • ½ cup sour cream
  • 2 tbsp fresh chives, chopped (for garnish)
  • ½ cup shredded cheddar cheese
  • 4 slices of cooked bacon, crumbled

Instructions

  1. Prepare the Potatoes:
    • Preheat your oven to 400°F (200°C).
    • Wash and pat dry the baby potatoes.
  2. Season and Bake:
    • Toss the potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper in a large mixing bowl.
    • Spread the potatoes on a baking sheet lined with parchment paper. Bake for 25–30 minutes, or until the potatoes are golden and tender.
  3. Add Toppings:
    • Once baked, let the potatoes cool slightly. Cut a small slit on top of each potato and gently press the sides to open them slightly.
    • Fill each potato with a small dollop of sour cream, shredded cheddar cheese, crumbled bacon, and a sprinkle of chopped chives.
  4. Serve and Enjoy:
    • Arrange on a serving platter and serve warm.

Notes

  • For extra flavor, add a pinch of cayenne pepper to the seasoning mix.
