- 2 cups cooked, shredded chicken (rotisserie chicken works great)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1/2 cup salsa (mild, medium, or spicy based on your preference)
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 8 small flour tortillas
- 2 tbsp butter or oil (for frying)
Instructions
- Prepare the Filling: In a mixing bowl, combine shredded chicken, cheese, salsa, chili powder, and garlic powder. Mix until well combined.
- Assemble the Quesadillas: Place 1-2 tablespoons of the chicken mixture on half of each tortilla. Fold the other half over to create a half-moon shape. Press gently to seal.
- Cook the Quesadillas: Heat butter or oil in a skillet over medium heat. Cook the quesadillas for 2-3 minutes per side, or until golden brown and crispy. Work in batches if necessary.
- Serve: Slice each quesadilla into thirds or halves for easy snacking. Serve warm with sour cream, guacamole, or extra salsa on the side.
Notes
- Add chopped jalapeños or a sprinkle of hot sauce for an extra kick.
- These can be baked in the oven at 400°F (200°C) for 10-12 minutes for a healthier option.
- Swap out chicken for black beans or sautéed veggies for a vegetarian version.
