  • 2 large sweet potatoes, peeled and diced
  • 1 red onion, sliced
  • 1 bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  • Preheat oven to 200°C (400°F).
  • Season chicken: Rub the chicken with 1 tbsp olive oil, garlic powder, smoked paprika, thyme, salt, and pepper.
  • Prepare the skillet: Heat the remaining 1 tbsp olive oil in a large oven-safe skillet over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes until they start to soften.
  • Add the onion and bell pepper: Stir in the sliced onion and bell pepper, cooking for another 3-5 minutes.
  • Add chicken to the skillet: Place the seasoned chicken breasts on top of the vegetables.
  • Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
  • Garnish and serve: Sprinkle fresh parsley over the dish before serving.
