- 4 chicken breasts (or thighs)
- 2 large sweet potatoes, peeled and diced
- 1 red onion, sliced
- 1 bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Preheat oven to 200°C (400°F).
- Season chicken: Rub the chicken with 1 tbsp olive oil, garlic powder, smoked paprika, thyme, salt, and pepper.
- Prepare the skillet: Heat the remaining 1 tbsp olive oil in a large oven-safe skillet over medium heat. Add the diced sweet potatoes and cook for 5-7 minutes until they start to soften.
- Add the onion and bell pepper: Stir in the sliced onion and bell pepper, cooking for another 3-5 minutes.
- Add chicken to the skillet: Place the seasoned chicken breasts on top of the vegetables.
- Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
- Garnish and serve: Sprinkle fresh parsley over the dish before serving.

- Feel free to add other veggies like zucchini or carrots for extra flavor.
